Cauliflower Soup with poached chicken

Soup doesn’t have to be boring and this soup is certainly not. I would happy eat it most days but alas my family like variety, but this is a quick go-to recipe in my house.

Serves 4


  • 1/2 – 1 chicken breast per person
  • 2 Onions
  • 2 Garlic Cloves
  • Bunch of fresh herbs – rosemary, thyme, basil and sage
  • 4 cups of spinach
  • 1-2 heads of cauliflower
  • 2-3 litres of Broth to cover
  • salt and pepper to taste.


  1. Put all the ingredients into a pot and cover with broth.
  2. Simmer until chicken is poached, then remove chicken.
  3. Continue to cook the rest of the ingredients until cauliflower is soft.
  4. Using a stick blender/thermomix blender soup into a smooth texture.
  5. Salt and pepper to taste
  6. Slice chicken and serve over the top.
