GAPS Lima Bean Cake

My family have start back on full GAPS this week, and are already seeing the benefits from it.

However life being life, there are always events and celebrations that happen, and food is a big part of celebrations and social events.

GAPS Lima Bean Cake

I first made this cake when we started GAPS three years ago and my little girl had a birthday. Since then it has become a family favourite and we love sharing it with friends.

Today was the perfect opportunity to do that.  A dear friend was celebrating a mile stone birthday, so we baked a cake to take along with us and share with our friends.


GAPS Lima Bean Cake

 Prep time: 15 minsCook time: 1 hourTotal time: 1 hour 15 mins


  • 3 cups of Cooked Lima beans.
  • 9 Tables of coconut oil
  • 3/4 cup of honey
  • 6 eggs
  • 2 Tablespoons of Vanilla, I used my homemade vanilla essence.
  • Pinch of good quality salt.
  • 1 tsp of Bi Carb soda ( good quality, and optional)


  1. Mix all ingredients together in a blender or food processor, thermomix, until well combined.
  2. Pour into a with greased cake pan. Bake for 50-55 mins on 180C, or a little longer if not quite set.
  3. I served mine with homemade sour cream and frozen raspberries mixed with lemon juice and little kombucha.
