Honey Roast Carrot Soup (GAPS)

This is a delightful soup that may just be the right thing to help get your children to start eating more soups. Soups are one way to get highly digestible foods and broths with healing powers into the family.  Our family really enjoy our soups with leftover roast meats to dip instead of using bread, or occasionally I’ll make a GAPS friendly bread (or off GAPS a nice sourdough).

Serves 8

  • 2 TBS Lard.
  • 8 medium carrot, cut into lengths
  • 4 TBS of Honey
  • 50 grams of Butter/ghee (or lard)
  • 2 medium onions, finely chopped

  • 2 litres of chicken broth
  • Salt and pepper to taste.
  • optional: Homemade Yoghurt/sour cream/ coconut cream to serve

  2. Place Lard into a roasting dish with the carrots.
  3. Roast for 40 mins until soft and starting to colour.
  4. Remove from the oven and mix the honey through.
  5. Meanwhile, melt the butter in a soup pot and cook onions and garlic until soft.
  6. Add broth and roasted carrots, bring to the boil, cover and simmer for 10 minutes
  7. Blend until smooth.
  8. (Optional) stir through yoghurt/sour cream/coconut cream and season to taste.
