Peanut Butter and Banana Waffles – GAPS

Waffles are something that I’ve never really had a go at making before, but they have been on my list for a while.  So in the back of my mind, I’ve been hunting for a waffle maker for a little while and yay I’ve found one.  So to celebrate finding one and getting to have a play with it, I’m going to share with you the peanut butter & banana waffles recipe that I made up while having a play with my new toy.   These waffles are great to eat as a snack or meal but they also make a great bread substitute for sandwiches.  Now in a most school’s nuts are a not allowed in lunch boxes to overcome that by substituting the peanuts for nuts and seeds, sunflower seeds work great.



  • 500 grams of peanuts, turned into peanut butter. (I just whiz them in the thermomix, you could use a processor or buy good peanut butter)
  • 4 Bananas
  • 1 tsp of salt
  • 1 tsp of bicarb.
  • 6 eggs
  • 1 TB vanilla essences
  • 1/4 – 1/2 cup of honey (depending on the sweetness you want and what you’re going to top it with).


  1. Blend all together in a thermomix or a food processor.
  2. Pour 1/3 cup of batter for each waffle
  3. Cook for around 3 mins.
  4. Top and enjoy. These waffles can also be used to make sandwiches or anything else you could imagine.

    1. I haven’t found one yet either, I normally put some safe baking paper in it to prevent it from touching the teflon.
